Biography

It’s hard to imagine that Paul Brummer has the time to tend to the likes of Diana Ross and Calvin Klein, just a couple of his devoted clientele, with a full-time job of decorating for such large events as weddings, movie premieres and Broadway openings. But Brummer, whose work has been featured in magazines such as Martha Stewart and InStyle as well as numerous wedding books, finds time to do it all. While growing up in Dearborn, MI, Brummer spent his afternoons at his parents flower shop, Hearts and Flowers. By the young age of 16 he was designing at international floral symposiums and knew exactly what his career path would be. Brummer studied architecture and design at Harrington College of Design in Chicago and upon graduation moved to New York City to work for the largest floral company in the world – FTD. After six years with FTD, Brummer desired a change of scenery and weather and moved to Florida to work as the special events director and designer for the grand Boca Raton Resort & Club. During his time in South Florida, Brummer planned events and developed décor for clients throughout Palm Beach County. Ten years later, missing the excitement and opportunity Manhattan provides, Brummer moved back to New York City hoping to find a job. Soon after he settled, Brummer saw a newspaper ad for the perfect job – floral and special events decorator at Tavern on the Green. A few days later, he was hired. “Working at Tavern on the Green under [former proprietor] Warner LeRoy was a lot of fun,” remembers Brummer. “I was given free reign when it came to design, and for me more was never enough. I was constantly expanding my ideas and making displays more and more elaborate.” Brummer also plans and executes Tavern on the Green’s signature over-the-top holiday décor. Continually making bigger and better holiday displays every year, particularly during Christmas, Brummer’s designs have helped make the restaurant a major holiday attraction for tourists and locals alike. Throughout the year, Brummer continues to develop his Christmas designs and every July he attends the American Institute of Floral Designers (AIFD) Symposium featuring international design lectures, courses and workshops. In September, Brummer orders the prototypes and begins decorating in November. It takes an entire week to decorate the restaurant and Brummer hires 30 people (in addition to his two full-time staff) who work nightly from midnight until 8:00 a.m. to help transform the restaurant’s interior into a holiday fantasy. Like the restaurant during the holidays, Brummer’s home, displays the same flair for over-the-top décor. An avid collector of arts and antiques, Brummer maintains an enormous personal collection of antique and European holiday ornaments. His media room is adorned with another collection – more than 300 autographed pictures of vintage movie stars, including icons like Greta Garbo and Jean Harlow. Feeding his appetite for art and history, Brummer visits Europe three times a year aiming to visit different cities every time he travels, with the exception of his favorite cities – London and Paris – which he visits more often. His days are spent touring renowned and little known art museums and visiting exquisite gardens – particularly England’s Kew gardens and Holland’s Keukenhof gardens – from which he draws inspiration.
